Luis Pato is the most famous winemaker in Portugal’s Bairrada region, which is south of Porto. The grapes are Baga, from old vines, sadi to have their DNA wrapped up with both Nebbiolo and Pinot Noir. This is a structured, smoky, red-fruited serious offering. Quite at home with the region’s most famous dish of roast suckling pig, but equally happy with belly pork, or anything with chorizo in. An hour in a decanter brings out a wonderful rock-rose perfume.
