The color is very intense and dark, the nose reveals a rich fruit, fully ripe and concentrated, accompanied by traditional balsamic notes of tobacco and Mediterranean herbs. In the mouth has a large concentration, intense, rich and dense with powerful but fine tannins, velvety and slender Ornellaia giving a feeling of great firmness. No doubt it will be a wine destined for long aging.
Ornellaia represents one of the most classic expressions of Bolgheri. Son of a collection of small and very concentrated, combines the mature part of the first week of September with a great freshness and liveliness due to slow aging in a cool and windy climate in the second half of September to October.
Philosophy of Ornellaia
The production philosophy focuses on a single goal: quality. Every choice then assumes great importance and requires absolute attention to detail. At no stage of the production process are allowed shortcuts: this is our way of working and that's how we get the best grapes according to the climatic characteristics of each vintage.
In the analysis phase and harvest empirical evidence allows us to choose carefully the bunches to collect. The taste of the grapes allows to better evaluate the maturation of the tannins and the balance of clusters, to determine the best time to harvest and the vinification technique for the grapes of each plot. We submit the grapes in a dual selection: a first sorting table for the verification of the quality, then a second check for the removal of any residual vegetation.
The grapes of each cru ferment separately, since each base wine contributes to the creation of the final blend, by virtue of the specific conditions of the vineyard of origin: combination of soil, climate exposure and of course the type of grape. Only after a year of barrel aging the base wines are assembled in compliance with the two main criteria: the expression of elegance inherent in the spirit of Ornellaia and vintage style.
