The Trijol family have been distilling since 1859 and are still an independent firm. They own all of their own vineyards and do not buy grapes, wines or eaux de vie from anyone else. As a consequence they are able to maintain close control of every aspect of production, from grape to bottle. The XO contains a blend of brandies, from ten to forty years old, the younger being used to bring delicacy, freshness and zest while the older providing richer, fruitier and more mature elements. This gives and average age of about thirty five years. The nose and palate are wonderfully full-bodied with notes of liquorice, vanilla and cedar wood, dried fruit, spicy oak and a hint of rancio, the prized flavour that discerns the best Cognacs. In short, this is an exceptional spirit.
