Please wait...The Grant Burge Sparkling Shiraz Cabernet is a deep ruby in colour, with a complex earthy nose of smokey oak and spicy cedar balanced with rich fruit characters of blackberries and cherry. It is a lively sparkling wine with a creamy mousse and an elegant feel in the mouth, finishing with a balance of acidity and fruit at the end.
This wine goes well with duck or other rich roasted meats.
The Shiraz grapes are taken from vineyards at the southern end of the Barossa Valley and the Eden Valley, where growing conditions are favourable for the well established vines. The Cabernet Sauvignon grapes are almost exclusively grown from the Barossa. The favourable growing conditions present enables the grapes to develop intense concentration and flavour.
Upon picking, the grapes are crushed and fermented seperately, and left on skins for a short time to ensure that the full fruit flavour matures. The ferments are pumped over three times a day, and then primary fermentation is completed in a mixture of French and American oak before being further aged for 15 to 18 months in old puncheons. The two wines are then blended, with the resultant wine being placed on triage for 18 months before being disgorged and liqueured with Vintage Port, a process which contributes to the complexity and richness of the finished wine.
