The Bollinger Special Cuvee Champagne is a blend par excellence and beautifully illustrates all that Bollinger is famous for. To look at, the wine is brilliant gold with a mousse consisting of a fine stream of bubbles. The nose is charactertistic of Pinot Noir, famously biscuity with ripe fruit and creaminess, whilst the fullbodied palate is a balance of acidity and fruit, with notes of peaches, cream and butter, a persisent mousse and a long finish. This is the champagne that defines Bollinger in the eyes (and mouths) of many!

Serve as an aperitif, or pair with plain sushi, lobster, scallops, grilled sea bass, quail, or soft cheeses.
