To look at, the wine is brilliant gold with a mousse consisting of a fine stream of bubbles. The nose is charactertistic of Pinot Noir, famously biscuity with ripe fruit and creaminess, whilst the fullbodied palate is a balance of acidity and fruit, with notes of peaches, cream and butter, a persisent mousse and a long finish. This is the champagne that defines Bollinger in the eyes (and mouths) of many!
Serve as an aperitif, or pair with plain sushi, lobster, scallops, grilled sea bass, quail, or soft cheeses.
Bollinger Champagne is one of the most famous Champagne houses - a family owned affair that has expanded and built a brand whilst maintaining true to the values of its founders, relfecting great deference to tradition. Recent purchases of more vineyards in Champagne means that Bollinger continues to grow whilst maintaining the ability to service approximately two-thirds of its fruit from its own vineyards. The deference to tradition is epitomised by the use of barrels for fermentation, including employing the champagne region's last cooper in house. The company's style remains true to itself, in accordance with Christian Bizot's original Charter of Ethics and Quality, created in 1922, and following the maxims of Madame Lily Bollinger herself.

I do love a glass of Champagne, and the only reason this gorgeous bottle of Bollinger didn't get 5 stars is because I have tried the Grand Anne and it blew my socks off!

I love Bollinger Champagne. I keep a bottle in the fridge at all times and at this price it's a steal!
