This non vintage champagne is pale gold in colour with a fine mousse and reflects many of the values of its sister product. It is rich and aromatic on the nose, well balanced on the palate and shows great finesse and complexity.
The only French champagne house with Latin roots, Ayala was established in 1860 in Äy, France by Edmond de Ayala, the son of a Colombian diplomat in Paris, who married the niece of a noble Viscount and received the Chateau of Äy as his dowry, along with prime vineyards located in Aÿ and Mareuil sur Aÿ. The House of Ayala was one of the elite founding members of the Syndicat des Grandes Marques de Champagne and was purchased by Bollinger in 2005.

This champagne is fresh, fruity, and measured in the mouth. It has character and feels like a "real" wine, not just some bland fizzy one dimensional champagne like some of the others are at this prices. It definitely feels like a more expensive champagne than it really is. You can tell it is made by Bollinger!
