Persimmon quality is overseen in the Languedoc by the renowned Italian producer Alberto Antonini.  Once he is happy with the quality the wine is moved to Tuscany where he has better control over the ageing and bottling process. 

The grapes are gently crushed and fermented in temperature controlled stainless steel tanks at about 26c in order to preserve the varietal character. During the fermentation, gentle extraction techniques are used with the aim of producing a wine with round, sweet tannins. Every day a couple of short pump-overs and a delestage (or rack and return) are carried out. From crushing to pressing takes only 8 days so as to avoid the extraction of any astringent tannins.

Outstanding quality Grenache, with a vibrant red colour, with ripe yet fresh aromas of wild strawberries on the nose, and supple, lively fruit character on the palate. Beautiful on it's own or enjoyed with light red meat or vegetable dishes.
