The rapidly emerging Toro region is best known for premium reds from small, well-heeled estates who see neighbouring Ribera del Duero as the role model. While the abundance of high quality fruit from old, gnarled bush-trained vines is perfectly suited to this purpose, modest grape prices also make Toro a great source of distinctive, well-made wines at more accessible prices. Covitoro, the region's foremost co-operative, excels at this level, in particular for robust, warmly earthy Tinta de Toro from 60 year old vines. Their small plantings of Malvasia and Verdejo also give an attractively fresh white similar to neighbouring Rueda. Having escaped phylloxera, many old vineyards remain with vines on their own rootstocks. Plantings are mainly Tinta de Toro with some Garnacha for softer wines. Vineyards are healthy and virtually organic as the climate allows minimal chemical intervention.

Covitoro is Toro’s second largest producer with over 1,000 hectares and the oldest vines in the region. Average production is less than 3.5 kg per vine and less than 1.5 kg for the older vines. The climate is continental and rainfall is just over 300 litres/m2. The vineyards are on average 750 metres above sea level and the soil is sandy/stony. 85% of the vines are bush trained and Covitoro adopt a policy of minimum intervention. Planting density is 2200 vines per hectare. Grapes are hand harvested in late September/early October.

A deeply coloured and full flavoured Rosado with aromas of ripe red fruits. A full-bodied and rounded style, juicy and off dry and with abundant strawberry and cherry fruit characters. Serve lightly chilled with cold meats, pizza, pasta or tapas.
