One of the few Champagne houses to still make rose Champagne by the process of macerating the skins of Pinot Noir grapes on the press for a few hours to extract colour and tannin. This is made possible by using grapes from old vines at Cumieres. 70% of this blend is Pinot Noir producing a deep pink colour with flashes of red. The bouquet has elements of strawberries, raspberries, blackberries and blueberries and after a short time opens out with nuances of honey. The palate is generous with a good tannic structure cushioned in fruit.
This is a Champagne to enjoy with foods such as fish, lamb, guinea fowl or even pheasant. Excellent with creamy cheeses and soft fruit puddings.
