What We're Drinking

Welcome to “What we're drinking”

All members of the Corks Out team are a little crazy about wine! Therefore, it seemed a good idea to share with you our own personal favourites.

Each month we will all update this section with one of our much-loved wines. It might be something that we found particularly good as a food accompaniment, an easy drinking everyday value for money wine or an exciting wine that gave us that “Wow” feeling.

If you have any comments on these wines or would like to tell us about your own favourites we would love to hear from you. Maybe we could create a “What you’re drinking” section!

Ruth Yates | Stockton Heath

Well, what can I say…. except, if I had a £1 for every time someone asked me what my favourite wine is then I would be a very wealthy woman. All I can say is that I have been incredibly lucky to have tasted thousands of wines during my 18 years in the wine trade and hopefully over the next few months I can share some of those delights with you. I will, however, say that I love fizz, I love white Burgundy and I love Sauvignon Blanc.

Ruth's Wine of the month
Santa Digna Cabernet Sauvignon Rose - Chile - Click here to buy Ruth’s choice

"I love Rose wine all year round, however, when the sun is shining it's even better, I am especially fond of the Santa Digna Rose from Chile, it has the most delightful fruit, not at all alcoholic ribina in a glass like some, no, this is sophisticated and elegant and is great with grilled fish on the BBQ."

Richard Yates | Stockton Heath

Most of you will know Richard as the Concha y Toro man and after 16 years with them the passion of Corks Out finally got to him so much that he felt this was what was truly in his heart. So, you can be sure that a few of his favourites will be coming from South America as that’s where his expertise lies, however, I do know that he enjoys quality European reds too.

Richard's Wine of the month
Purple Angel Vina Montes - Chile - Click here to buy Richard's choice

"I know it’s from Chile and that I often go back there for my choice but this wine is so fantastic! Purple Angel is a blend of 92% Carménère (a Bordeaux reject that just loves the Chilean climate) and 8% Petit Verdot from the Colchagua Valley. Much of the Carménère comes from Aurelio Montes’ La Finca de Apalta estate, bringing sophistication and elegance to this full bodied wine. I recommend an hour or so decanting before drinking. Great with Char-grilled meats."

Richard Depledge | Stockton Heath

Richard joined Corks Out from Wine Cellar a couple of years ago and passed his advanced certificate in wine last year. He knows the Corks Out range very well and you can bet that a few of his favourites will be in Argentina and Chile, then again, he loves a bit of Italian.

Rich's Wine of the month
Schloss Vollrads Riesling Kabinett - Germany - Click here to buy Richard's choice

"This wine is perfect to drink with summer salads, seafood and grilled chicken or fish. A classic yet modern style of German wine with delicious floral aromas and clean ripe fruit. It is also relatively light in alcohol at 11.5%.  Delicious!"

Mervyn Howard | Chester

Mervyn has knowledge of wine that amazes all of us. Although he is very modest about this I don’t think there is a wine, region or country that he couldn’t talk to you about. Not only does he have his Diploma in wine but Mervyn tutored the subject for many years, leaving us all overwhelmed with his knowledge. Therefore, I am not sure what will turn up over the next few months, all I can say is watch this space….

Mervyn's Wine of the month
Firesteed Pinot Gris - Oregon - Click here to buy Mervyn's choice

"A stunning wine from Oregon, fresh and lively on the nose, rich and fragrant on the palate. A very well made wine at a great price"

Peter Stephen | Chester

Not sure what to say about Peter, maybe you should meet him and decide for yourself, he has an incredible thirst for the knowledge of wine and never stops talking about it. He will amaze you when chatting to him and his time spent in Australia is bound to show up a few delights from down under.

Peter's Wine of the month
Dog Point Sauvignon Blanc - New Zealand - Click here to buy Peter's choice

"This wine is perfect for spring and early summer. Fresh with great citrus and tropical fruit character. Perfect accompaniment for English asparagus."

Andrew Pritchard | Chester

Andrew is an enthusiast and although his background is in financial marketing, his liquid assets are now in a bottle rather than in a bank. He has a love of wine and enjoys meeting new and loyal customers. His favourites are a secret and will come to light over the next few months.

Andrew's Wine of the month
Charles Melton Nine Popes - Australia - Click here to buy Andrew's choice

"A rich, smooth full bodied wine with a deep complex style. Australia's answer to Chateauneuf-du-Pape made from Barossa valley Shiraz and Grenache"

Ian Sinkinson | Chester

If it’s French wine you are looking for then look no further, Ian frequently travels to France and has an eclectic view on the whole French thing. He will help me to source some really special, exclusive wines from some of the smaller areas he has visited. Therefore, French will definitely be on his list.

Ian's Wine of the month
Cote de Beaune Grande Chatelaine Domaine Newman - France - Click here to buy Ian's choice

"A modern style of Burgundy with good depth, rich yet perfectly balanced."

Marion Bell | Stockton Heath

You may not have seen much of Marion in the store as she helps me out with many of those very important administration jobs that keep the business running and I must admit she is a PA with a difference. When Marion came to Corks Out she announced that wine wasn’t really her thing, however, over the last few months she has developed a real taste for it and has great commercial palate.

Marion's Wine of the month
Prosecco DOC Valdobbiadene  - Italy - Click here to buy Marion's choice

"Although the Dr Loosen Riesling is my favourite wine, I have to say that when I tried the Valdobbiadene Prosecco I was really impressed, it's a great summer drink and half the price of Champagne."

James Nixon | Stockton Heath

James is our new addition to Corks Out and says he is loving every minute of it. You will love him as he was a Chef before joining us and is passionate about food and wine, therefore, whether it's a special dinner party or spag bol for two he will help you choose the right wine as well as giving you some tips in the kitchen.

James's Wine of the month
Runamok Shiraz - Australia - Click here to buy James's choice

"I am drinking Runamok Shiraz from South Eastern Australia. This no holds barred spicy red wine does exactly what it says on the tin! Great wine to go with all the food on the bbq that doesn't blow your head off. To top it off it's under £6!"
