
In the 1500s the copper riveted alembic still was invented and was found to be very effective for distilling alcohol from fermented organic matter. These pot stills are still favoured today by distillers of whisky, cognac, tequila and some vodkas.
A distilled beverage, liquor or spirit is a drinkable liquid containing ethanol that is produced by means of distilling fermented grain, fruit, or vegetables. The term "spirit" refers to a distilled beverage that contains no added sugar and has at least 20% ABV. Popular spirits include brandy, fruit brandy (aka eau-de-vie), gin, rum, tequila, vodka and whisky. Adding sugar and flavouring makes the spirit into a liqueur like the addition of distilled bitter orange and sugar to cognac to make Grand Marnier.
