Prosecco is the most recognised and famous Italian sparkling wine, produced principally in the Veneto region, in the Conegliano and Valdobbiadene DOC's. Prosecco is also the name of the principal grape used in the production of this Italian wine, although up to 15% Verdiso Perera and Bianchetta can also be used in the blend.
Prosecco is typically distiguished by its nose of lemon and green apples, with flavours of white peaches, and freshly picked flowers. Prosecco Superiore di Cartizze DOC, complete with its steep hillsides withn the Prosecco di Valdobbiadenne is considered to produce the most complex and interesting Prosecco sparking wine.
