"I have not missed any of your Summer and Christmas wine tasting events since you started and before last night's event I was wondering whether you could maintain the high standard you have set over the last few years."
Paul Bowyer
Chianti Classico is a leading Tuscan DOCG zone which spans from Florence to Siena. The origins of Chianti can be traced back to the Middle Ages, although Chianti Classico came into its own in 1716 when Grand Duke Cosimo III of Tuscany classified the zone. The classification requires that a Chianti wine is made form a minimum 80% Sangiovese and a mximum 20% Canaiolo. From 2006 onwards, no white grapes are allowed in the blend.
Chianti Classico requires that the wine cannot be released until the October following the harvest, while Chianti Classico Reserva must undergo 24 months of ageing prior to release, including at least 3 months in the bottle.
