Amarone

Amarone della Valpollicella is a leading Venetian wine DOC which represents approximately a quarter of the total production of Valpollocella wine in Italy. Amarone wine is made using partially dried fruit that has been left to shrivel in the sun, to produce a richer, fuller unfortified dry red wine. The DOC is located between Lake Garda and Venice, and its focal point is around the villages of Negar, Fumane, Marano, Sant Ambroglio nad San Pietro-in-Cariano.  The climate is relatively climate with vineyards in the foothills of Lessini Mountains between 150m and 300m above sea level in stoney, volcanic soil. Amarone wine must contain a minimum of 80% Corvina, with a blend of Rondinella, Molinara and Croatina making up the rest. It is then aged for up to 7 years prior to release.
